Like me, many of us grew up hearing this phrase: "You don’t mess
with food." On one hand, it makes sense as a reminder to treat food
with the respect it deserves, minimizing waste. On the other hand, it
may have made us more serious about how we should eat, instilling
some of the rules of etiquette. But eating is more than just fueling
ourselves to survive. Beyond being a social experience, it’s also a
sensory one that goes beyond just taste. So, for this challenge, I
came up with a plate with raised edges where, using your fingers, you
continuously trace a road—a common concept among chefs, the “road
mark in a sauce.” Full of textures to descover underneath
